No fuss Tim Tam and White Chocolate Cake


- 1 packet family size chocolate Tim Tams

- 440grams white chocolate

- 440gms thickened cream

- 1/2 packet marshmallows (white only)

- 2 punnets raspberries

- Oil spray

Equipment:

- 24cms pie tin with removable bottom

- Food thermometer

- Large spoon

1. Lightly grease a 24cm pie tin with vegetable/canola oil spray

2. Place all of the Tim Tams into a food processor and blend until crumbs (3-4mins)

3. Tip out tim tam crumbs into greased pie dish and smooth out until even using the back of a large spoon. Place into fridge for at least 15 minutes.

4. Using food thermometer, heat up the cream to 80 degrees on stove top. Remove thermometer and turn heat down to low and then add chocolate and stir.

5. Once chocolate is melted add in the marshmallows and stir until all melted and smooth on low heat.

6. Take out pie tin with cooled tim tam crumbs and pour in chocolate/cream/marshmallow mixture.

7. Place in fridge for at least 4 hours or overnight.

8. Once firm, place fresh raspberries (or fruit of your choice).

Thermomix Instructions:

1. Lightly grease a 24cm pie tin with vegetable/canola oil spray

2. Place all of the Tim Tams into TMX bowl and chop 10secs/speed 8

3. Remove lid and ensure all tim tams are chopped to crumbs. If not, continue to chop on speed 8 for another 10 secs.

4. Tip out tim tam crumbs into greased pie dish and smooth out until even using the back of a large spoon. Place into fridge for at least 15 minutes.

5. Clean out bowl and add cream. Heat to 80degrees / speed 1 / 4 mins.

6. Add in white chocolate and marshmallows to cream and set to 50 degrees/speed 3/ 4 mins

7. Take out pie tin with cooled tim tam crumbs and pour in chocolate/cream/marshmallow mixture.

8. Place in fridge for at least 4 hours or overnight.

9. Once firm, place fresh raspberries (or fruit of your choice).
