Craisin and Caramel Cookies


Ingredients:

  • 100 grams castor sugar

  • 200 grams of butter, cubed, slightly chilled

  • 350 Self Raising flour

  • 1/2 a can of condensed milk (approx 195 grams)

  • 100 grams of caramel bits

  • 75 grams craisins (or you can replace with any dried fruit - i.e sultanas, chopped apricots.

Equipment:

  • Stand mixer or hand held mixer

  • Kitchen scraper

  • Wooden Spoon

  • Baking Tray

  • Baking paper

Method:

  • Preheat oven to 170c degrees (fan forced)

  • Line a large baking tray with baking paper

  • In your mixer, cream the castor sugar and cubed butter until well blended. Approx 2-4mins

  • Add the SR flour and condensed milk. Make sure NOT to add all the condensed milk as it will be too sticky.

  • Mix on low speed for 3-4 mins or until well combined. Ensure the sides of the bowl are scraped down.

  • Using a wooden spoon, mix in the caramel bits and craisins.

  • Roll into small balls and press slightly down onto tray.

  • Bake for 10mins - you don't want them to go brown

  • Leave for 5mins to cool. They will harden as they cool down

Thermomix Method:

  • Preheat oven to 170c degrees (fan forced)

  • Line a large baking tray with baking paper

  • Add butter and sugar to TM bowl and cream for 30 sec speed 6

  • Add SR flour and condensed milk to TM bowl.10 secs speed 6 then scrape down sides of bowl and do another 10 secs speed 6

  • Add caramel bits and craisins and mix reverse, 30 secs, speed 2/3. You may need a bit longer but don't go higher than speed 3.

  • Roll into small balls and press slightly down onto tray.

  • Bake for 10mins - you don't want them to go brown

  • Leave for 5mins to cool. They will harden as they cool down
